Vinification & Tasting Notes
The C9P's Classic Red 2020 is blend of Cabernet Sauvignon 67%,Merlot 23% and Alibernet 10%. The red grapes are harvested and sorted twice only by hand. Cold skin contacts pre-fermentation followed by a moderate warm fermentation of 26 °C. Pressed after 25 days of maceration and aged for 12 months in French oak (225L).
Bright ruby color wine. On nose, it shows great fruitiness, such as red cherry, raspberry & mulberry, with hints of cigarette box & liquorice. The palate is supple, loaded with freshness, pleasing acidity & nicely mellowed tannins, rendering a well-balanced structure. Long aftertaste with lingering fruity aromas, could be drinking now.

C9P's 2020 harvest report
In 2020, the overall quality of the various grape varieties of Chateau Nine Peaks is very good, especially our Chardonnay, Cabernet Gernischt, Petit Verdot & Marselan with the outstanding performance and Cabernet Franc and Merlot have the second highest quality. At the same time, the quality of Cabernet Sauvignon has also improved a lot compared to previous years.

C9P's Food for Classic Red 2020
Tea Fragrant Beef
Ingredient:
300g of beef tenderloin, 20g of bamboo leaf tea, 5g of coriander and some green onion
Seasoning:
salt, monosodium glutamate, sugar, Maggi soy sauce
Method:
Cut the beef tenderloin into strips and put the tea leaves into the boiling water.
Heat the oil in a pot, pat the beef tenderloin with a little starch and fry it for later use. Drain the water from the tea leaves and fry it for later use, too.
Saute the chopped green onion, add in fried beef, tea leaves, the seasoning and stir fry evenly.
