Vinification & Tasting Notes

Grapes harvested and sorted twice only by hand. Fermentation in small sized steel vats at 14/16 °C. Tank aged on the lees (Yeast biomass) for 3 months. Blended with 55% of barrel fermented Chardonnay.

A bright straw yellow Chardonnay with green hues, showing some citrus fruit, orange peel, white flowers, together with light creamy notes. The palate is rounded and flavorsome, delivering a good complexity of toasty & mineral flavors, which are well-poised by a pleasant acidity, with hints of nutty touches lingering in the mouth in the after-taste.

C9P's 2021 harvest report of Chardonnay

From August 25th to 28th,2021, we harvested Chardonnay, which officially kicked off the 2021 harvest of Chateau Nine Peaks. The sugar content of Chardonnay was higher than 215g/L and the acidity remained at 6.5. Between g/L-7g/L, the grape is healthy and disease-free with the high maturity. Both technical indicators and sensory analysis of grape maturity indicate that 2021 will be another excellent vintage for the Chardonnay.

Baked Conch with Saffron

C9P Chardonnay Reserve is released today


Ingredient:

Conch,purple onion, chrysanthemum, kumquat, cherry tomatoes

Seasoning:

Saffron, olive oil, butter, salt, dry white wine, light cream

Method:

  1. Remove the shell of the conch, clean it with a brush, slice and blanch it for later use;

  2. Diced the purple onions for later use;

  3. Put the butter in the pot and melt it, add the olive oil, then the diced purple onions and stir-fry until fragrant. Then add the sliced conch and saffron and pour some Chardonnay wine and salt inside, and finally add the light cream and mix them thoroughly.

Features: Combination of Chinese and Western flavors, rich milky fragrance.
