Vinification & Tasting Notes
Grape's harvest and sorted twice only by hand. Direct pressing of the grapes and fermentation in small sized stainless-steel vats at 14/16 °C. Tank aged on the lees (Yeast biomass) for 3 months.
Bright pale-yellow color with slightly green hues. Great intensity, full of white flowers, lemon zest & stone fruits, with hints of minerals on the nose. While citrus fruits develop on the palate, the wine is roundly textured but well-balanced by lively acidity, rendering the wine a great freshness & lingering aftertaste.

C9P's 2021 harvest report of Chardonnay
From August 25th to 28th,2021, we harvested Chardonnay, which officially kicked off the 2021 harvest of Chateau Nine Peaks. The sugar content of Chardonnay was higher than 215g/L and the acidity remained at 6.5. Between g/L-7g/L, the grape is healthy and disease-free with the high maturity. Both technical indicators and sensory analysis of grape maturity indicate that 2021 will be another excellent vintage for the Chardonnay.

C9P's Food for Classic Chardonnay 2021
Ingredient:
500g of live shrimps
50g of cheese
10g of corn kernels
Seasoning:
5g of Chateau Nine Peaks' Classic Chardonnay
a little salt, monosodium glutamate and pepper
30g of butter
10g of Thai chicken sauce
Method:
Peel the live shrimp and chop them into puree and add the ingredients and seasonings and stir well;
Melt the butter in a non-stick pan and knead the shrimp paste into balls by hand, put them in the pot, flatten both sides of the shrimp balls with a spoon, and fry each 2 minutes, until golden yellow color and ready to serve.
