Why does C9P produce a Single Variety series? What are the differences and advantages between Single Variety and other series? 

Jacky Yan, deputy general manager of C9P, gave a detailed introduction.

The Single Variety series carries the expression of the terroir and conveys the terroir adaptability of a specific variety.

The Single Variety series and the other products series can complement each other's advantage. They not only guarantee the style and quality of the estate, but also highlight the terroir of the dominant varietal estate. The other ranges are multi-varietal blends. The Single Variety series style is maintained to ensure quality. At the same time, different grape varieties have their own strengths and weaknesses, and blending multiple grapes together can complement each other's strengths and weaknesses to produce wines with a richer and more balanced taste.

What are the terroir characteristics of Cabernet Franc plots?

A

This variety is located on a south-facing slope with a north-south row orientation. Gravelly soil with small stones mixed in the soil and rich in organic minerals. Temperate monsoonal continental climate, annual accumulated temperature of 3745℃, annual light time of about 2650 hours, annual average temperature of 14.46℃, annual rainfall of 559mm.

What special growing methods are used to grow this variety well?

A

The variety suffers from poor pink fruit and color change, so it must be strictly controlled with yield controlled at 6 tons per hectare; leaf removal treatment before color change to promote coloring. Meanwhile, the ripening period is divided into two harvests, and the batches harvested earlier are used for rosé brewing to ensure a more concentrated maturity and intensity of raw materials in the brewing single variety. Water and fertilizer need to be guaranteed to ensure full ripeness.

At harvest, how did the 2020 vintage of Cabernet Franc perform?

A

Cabernet Franc should be the perfect combination of elegance and power, a variety preferred by the trade. Harvested on October 5, 2020, the 2020 is ripening just right compared to the relatively dry weather of 2019, with a relatively perfect sugar-to-acid ratio and aromas of rich red fruit.

About the Vinification of Cabernet Franc

Why did you choose the Cabernet Franc to make Single Variety series?

A

Our first attempt at doing Cabernet Franc as a single variety in 2016 was recognized by industry professionals. As the age of the trees increased, it also gave us a sense of the potential of Cabernet Franc in the Shandong region.

Are there any special vinification methods used in the brewing process?

A

Based on the ripeness of the Cabernet Franc and the style of wine expected to be made, we harvested the Cabernet Franc separate.

In the late September 2020, the Cabernet Franc was harvested early to maintain good acidity for the rosé wine.

After 2 weeks, the Cabernet Franc reached good ripeness and was harvested to make a single variety wines, which was fully barrel aged for 12 months after fermentation was completed.

What are the characteristics of this wine?

A

Bright ruby red colour. From freshness to complex aging oaky flavours, intensive red fruit, herbals & spices with really velvet textures on the front palate, then gradually intense& layered tannins with caramelised toasty flavours at the back of the taste. Reminiscent of chocolatey syrup, which is nicely balanced by lively acidity. So much flavours like caramel, vanilla & chocolate still lingering around  in the aftertaste.
