2023 Spring
February: Clearing the vineyard
Clear the vineyard, i.e. clean out the branches pruned in winter. The branches may carry diseases and insect eggs, so they must be cleared in time. It seems to be a simple job, but it requires 30 employees to work in the vineyard for 2 months, and the work is expected to be completed in March.
The winter pruning has been completed, why are there still a few plots of grapes that have not been cut in early March?
Early March:New Vintage Wine Tasting
Marc DWORKIN, the Master Winemaker of C9P, along with the production team of Emily, the winemaker, and Sam, the Chief Viticulturist, tasted the new vintage wines.
The main focus was on tasting the 2022 wines. At this time the wines have completed the fermentation process.
White wines: The main tasting is the quality and potential of the different plots of Chardonnay fermented in tank for the Classic and Reserve blends.
Red wines: Tasting the quality and potential of each grape variety in 2022 and deciding which barrels to put them in.
